The future of bread: how much do you really know about flour? | Blair Marvin | TEDxStowe

A box of flour on the doorstep changed the trajectory of Blair Marvin's bakery and arguably helped revitalize the entire local grain economy. Modern milling is designed for separation, but Blair passionately argues that by restoring local grains and traditional techniques we emphasize inclusion. This not only improves the quality of our food but the health of the whole community. Blair is at the forefront of a baking revolution. She is co-owner of Elmore Mountain Bread, New American Stone Mills and Fire Tower Pizza in Vermont. This talk was given at a TEDx event using the TED conference format but independently organized by a local community. Learn more at https://www.ted.com/tedx
